Meiji Sushi Restaurant and Bar was born from a love of sushi. Local sushi chef Cai saw an opportunity to create a Wisconsin’s palate through his own sushi creations and Asian-inspired dishes. In 2000, Cai opened the first Meiji Cuisine in Waukesha.
